When my mom bakes these in the morning, my nose wakes me up.
Here’s a simple recipe that can’t go wrong; it involves ingredients that you probably already have in your kitchen. Without butter, this light and natural bread presents a fruity aroma and is perfect for breakfast or a snack!
This bread actually comes in two versions. apple and banana. If you like the classic smell of cooked bananas (mmm), then stick with the banana. If you want to give the bread a bit of a citrus twist, then go for the apple. The flavor will also differ with the kind of nuts or spices you put in.
Prep time: 5 minutes
Baking time: 35-40 minutes
Here’s what you’ll need to make 4-5 donut-sized pieces:
1 cup milk
1/2 cup grape seed oil (or any cooking oil you like)
1’1/2 cup flour
1/2 cup brown sugar
a pinch of salt
1 cup minced apples OR 2 bananas, chopped
1 cup of ground nuts of your choice (I put almonds, walnuts work well too!)
2 teaspoons baking powder
OPTIONAL: 1 tsp cinnamon or 1 tsp vanilla extract. I tend to do without these because I think the natural smell of the fruit is lovely enough (:
—-Preheat your oven to 180 C’ (356 F’)—-
1. Mix ALL THE INGREDIENTS, preferably putting in the nuts and fruit at the end.
2. Pour the mix onto your favorite baking pan

And there you have your amazing bread in just two simple steps. I find that without butter, this bread is not too heavy and goes perfectly well with a hot cup of coffee in the morning. It’s also a cute snack to serve when you have someone over, or when you want to bake a sweet homemade gift for a friend.
