Today’s recipe is something that I tried for the first time last winter: flour-less bread using sweet potatoes. It’s perfect for a quick snack, and it can also be paired with many other foods because it has a very light and subtle flavor. This recipe calls for just two ingredients, sweet potato and eggs. And guess what? It’s finished in the mighty microwave (aka college student’s lifesaver) in a jiffy!
3 Steamed Sweet potatoes
3 egg whites
That’s literally it. But I think it’s great to add some nuts and seeds, so if you can get some ready if you would like!
1. Mash the sweet potatoes first.
2. Whip the egg whites until they have a foamy consistency.
3. Mix well together (insert optional nuts and seeds here) and pour into a microwave-safe bowl.
4. Microwave for 8~9 minutes and you have flourless bread!
That’s really it. If you want little muffin-shaped piece of bread, divide the mix into small microwave-safe bowls; if you want a loaf of bread, place the mix into a bigger glass Tupperware (without the lid) to get the rectangular shape.
Because the flavor of this bread is very subtle and the texture is not too fluffy, it works as dessert, a light side to a cup of coffee, or even sandwich bread!
