My mom and I found packets of fresh basil at less than a dollar at this new grocery store that just opened next door. So we decided to make an all-natural, homemade garlic-basil pesto with the fragrant leaves! With the pesto I concocted a clean, chicken salad bowl that is not only healthy, but also satisfying to the tastebuds.
Here’s a quicky description of the pesto:
5 cloves of garlic (or about a spoonful of minced garlic)
2 cups of fresh basil
1/4 cup of pine nuts (you can choose to toss them in a pan for about a minute for a deeper flavor)
2/3 cup Extra-virgin olive oil
1/4 cup of Parmesan cheese (you can add less or add more)
salt and pepper to taste
*Put the basil, garlic, cheese, and EVOO and blend a little bit, then add in the pine nuts to get that pesto texture. Mmmmmmm THE SMELL IS AMAZING
For this super easy dinner, I took a tablespoon of the pesto and sizzled it in a pan, then threw in some chicken breast and let it cook in the delicious flavor. Many people say that olive oil is better eaten in cold dishes and I agree, but the pesto has the fat to cook meat and the delicious smell of the basil, so good enough for me!
The rest is just assembling ingredients. I had some quinoa and pink rice handy, so I put some of that plus some mixed greens and tomatoes on my plate, placed the beautiful chicken on the bed of greens, put a little spoonful of the pesto on the side for an extra sauce/dip boost, and finished off with a sprinkle of light italian dressing! It tasted awesome, and it literally took me less than ten minutes to put this together. The pesto recipe turned out to yield more pesto than we expected (enough to fill a peanut butter jar), so once you have that made, this quick healthy dinner recipe is a piece of cake to make!
